Hey everyone!!! I been gone through the Summer dealing with Mom’s health and keeping the kids sane. Mom has been in and out of the hospital several times, with the latest being just last week. We’ve decided to go ahead with the kidney transplant process. Our first step is me being a match. So, all prayers and positivty is much appreciated.
I’m feeling a little more pep in my step as the year winds down and we get into Fall. I’m a pumpkin spice loving fool and I make NO apologies. Amani will be 13 in November so my mood is also becoming more celebratory. In the spirit of Fall in NYC, I made a super simple dessert that filled my kitchen with a wonderful but light cinnamon scent. Avery is really loving apples lately so I wanted to change them up for him. I even got Amani to come help make them. That is a miracle because NOTHING can pull that child away from Tik Tok( shout out to Charli D’Amelio whose Dunkin Donuts drink we sampled). Thanks to Little Spice Jar for posting this recipe on IG at the perfect time!
INGREDIENTS:
*NOTE* What’s missing is lemon juice. Also you’ll need cornstarch slurry to thicken sauce.You will need depending on which apple you use. I used Red Delicious and but didn’t use it. Check the original recipe for notes about choosing apples.
2 tablespoons of butter
teaspoon of ground cinnamon(I used at least 2 tablespoons. It’s weird that its got Cinnamon in its title but so little cinnamon is required)
2 tablespoons brown sugar( I used light brown)
3 big apples cut an inch and a half thick
Lemon juice(don’t use for granny smith)
A dash of kosher salt
DIRECTIONS:
1) Melt butter, add apples. Saute for a minute . Add cinnamon,sugar, and salt. If you’re doing this on stovetop add 1/3 cup of water.
2) Let apples cooking for at least 2 minutes. Mine took more like 10 minutes, so times may vary.
3) Add slurry, let it thicken. That’s it.
I used vanilla bean ice cream. It was delicious. The taste was almost caramel like which Amani really liked. Even though I used more than the recipe called for, the cinnamon was still not overpowering and was just enough. Obviously this could’ve pie filling and I think I might try it as such for Thanksgiving. What are your Favorite Fall recipes???
